Blackened Chicken Angel Hair

Saute chopped Shallots, Garlic and Mushrooms in Olive Oil for 2 minutes.  Add Stewed Tomatoes,

Chicken Broth, Salt, Pepper, Cream and Butter.  Saute for an additional 5 minutes or until sauce is

reduced.  Add Angel Hair Pasta and simmer for an Additional minute.  While pasta is cooking, pan-sear

chicken breast that has been rolled in southwestern seasoning, "Paul Prudhommes Paultry Magic".

Slice Chicken Breast and served over tossed pasta, garnish with Steamed Snow Peas.
